"Not Me" and Pancakes!

If you haven't noticed, it has been about a week since my last blog. The only excuse I have is that I was just plain tired! Pooped! Beat! Run down! Exhausted! No urge to turn on the computer this week. Every single nap time had by Lucy this week was also had and enjoyed by me.

The bloggy me is back and having missed "Not Me" Monday I can assure all of you that my mommy mishaps did not get overlooked!

This blog carnival was created by MckMama. You can head over to her blog to read what she and everyone else have not been doing this week.

It was not me that was so tired one morning that I put Lucy's tank top on backwards. It was not me that ran errands around town all day with a child that had a tag sticking out. It was nearly touching her chin and I did not even notice! Nope. Not me!

It was not me who screamed like a teenage girl in a horrible B murder movie. You know that girl that runs away? No. She does not really run. More like jogs away from the villain and then, while looking over her shoulder, trips over a tree root and tosses herself helplessly onto the ground to be slain by the mass murderer? Nope. I did not scream out loud like that stereotypical girl and I did not jump a few feet when a man-eating spider dove straight at me from inside Lucy's diaper bag. I am pretty sure that the black, hairy arachnid was not going to eat me! Nope. Not me! I can assure you that I am a lot braver than that!

In this week sans blog and computer time, I did have time to come up with some more tasty things for Lucy to eat that are not only yummy but higher in calories than the normal item. Here is a recipe that she loves in the morning. Top these bad boys with some fresh whipped cream, syrup, powdered sugar, bananas or vanilla yogurt! The whole family will enjoy the fluffy goodness that these hot cakes bring to the table!

Ricotta & Blueberry Pancakes!!

1 cup Bisquick
1/2 cup whole milk
2 eggs (seperated)
1 tsp. vanilla extract
1/4 cup whole milk Ricotta Cheese
1/3 cup blueberries (fresh or frozen)

Combine Bisquick, milk, 2 egg yolks, vanilla and ricotta into a bowl. Whisk until blended. The batter will be lumpy. DO NOT over mix!

Beat the 2 egg whites until fluffy and stiff peaks form. This may take up to 4 minutes so be patient! They will make your pancakes so light!

Gently fold fluffy whites into the batter. DO NOT stir. Fold in blueberries.

Pour approximately 1/4 cup of mixture onto a hot griddle (350-400F degrees.) Flip pancake when edges begin to bubble and dry out.

Makes 6-8 delicious pancakes. Double the recipe for a large family OR freeze and enjoy them the entire week! **About 110 calories per pancake.

Tiny Dancer

This tiny dancer is wearing shoes circa 1982-83! I wore these shoes as a child and my mom was kind enough to foresee the future and save them for Lucy! These blue double-buckle shoes have a hard leather bottom that make it perfect to tap dance in!

"Not Me" Monday

This blog carnival was created by MckMama. You can head over to her blog to read what she and everyone else have not been doing this week.

All I have to say for "Not Me" Monday is that I absolutely did not tell a co-worker that I would work her shift tonight down at the bar just so I could get a break from Lucy's bad attitude today.

Lucy was not whiny at all today and she not did she test my patients. We were having a lovey day spent with Grandma and Grandpa and she was not in a bad mood at all.

Lucy did not have a tantrum over the smallest things like whether to sit in a booster seat a lunch. There was absolutely no power struggles about breakfast, nap time or lunch. Nope. Not us!

I did not have to pin Lucy down in her car seat just to get it buckled today. In the last 19 months of Lucy's life she has not built up amazingly powerful Herculean strength to sidecar her stubbornness!

I am not excited about getting out of the house tonight even if that means I have to go to work! Nope. Not me!

Funderland

Sacramento has Land Park where there are amusement rides, pony/horse rides, ponds to fish in, ducks and squirrels to chase and also contains the Sacramento zoo. All this in one park! Too good to be true but it is true! After attempting to go to a Portuguese (my ancestors heritage) Wine and Food festival that turned out a dud we headed over to Land Park for some fun and her first pony ride EVER!

Lucy takes a gander at her token and waits in line for her pony ride.

She patiently waits for her pony to saunter around the bend.

Mommy helps Lucy get all buckled into her saddle atop "Ladybug" the pony.

The proud cowgirl goes around the trail acting as if she had done all this before. Like always, there was not one ounce of fear in her!

Lucy and mommy take the buggie for a spin around the race track!

Our photo finish. We won the race!
Preparing to ride on the carousel that went way too fast for my liking! Aren't these things supposed to be a leisurely children's ride??

Lucy and mommy hand-in-hand get ready to spin on the vortex of terror, I mean, the carousel! I was seriously a little queasy when I got off this thing! BLAH!

Dog Day Afternoon

Lucy and I had a great day at the Breastfeeding Awareness Walk on Thursday afternoon. It took place at the state capital in Sacramento, California.

There were different speakers from the WIC program and Breastfeeding Coalition discussing the new upcoming WIC changes in food supplements. Some of those changes will make for a healthier nation of children by providing fruit and veggie choices and a choice of soy milk and tofu. If a mother were exclusively breastfeeding her child for the first 6 months and NO formula were being used then she would qualify for a larger quantity of food to help keep herself healthy, including meat choices and fruits and veggies.

Some other changes include postponing the use of infant formula for the first month of a child's life to try and establish a healthy breastfeeding relationship between a newborn and it's mother! This is not only healthier for the child and mother but is much more cost effective for taxpayers and families. WIC is a nation wide, federally funded program so wouldn't it be smart, especially in this down turned economy, to promote FREE breastfeeding instead of paying over $10 for every can of formula??

Here is Lucy enjoying a snack of Goldfish crackers before hitting the trail.

My friend and her doggy Midnight joined us for our walk around the capital. It was a warm day but that didn't stop us! We were marching for breastfeeding. Rain, sleet or 100 degree weather wouldn't stand in our way!

After the walk, we spread out a picnic in the park and ate sandwiches while Lucy and Midnight became the best of friends! She pulled every blade of grass within a 5 foot radius and blanketed Midnight with all of it.
Midnight has the BIGGEST doggy heart and was so patient with Lucy. I really couldn't believe it!
